Indonesia Blue Bianca (filter)
Blue Bianca is produced in the highland plateau of Onang Ganjang by smallholding farmers. Fresh cherries are hand- picked, pulped, and fermented for 12 hours without water. The cherries are then hulled, washed, and dried for two days. The parchment is removed through the Sumatra-specific Giling Basa wet hulling process. Green beans are dried for an additional five days, then hand-sorted and rested for 30 days before shipping. Blue Bianca is prepared by a young local processor in Dolok Sangul.
This is a truly unique coffee that stands out on the cupping table. Distinctive, bursting with character, and setting a standard for top-end Indonesian coffee.
